Vitamin A was first extracted from sturgeon liver by American Scientist Margaret Davis. Due to its lipophilic properties, this yellow viscous liquid was first named "lipophilic A", and later, with the deepening of research, it was officially named "vitamin A" in 1920.

Vitamin A is a kind of low molecular compound with special chemical structure, including two active subtypes: vitamin A1 and Vitamin A2. The physiological activity of Vitamin A2 is about 40% of that of vitamin A1. Vitamin A1 mainly exists in the liver of Saltwater fish, while Vitamin A2 is higher in the liver of Freshwater fish. Plants do not contain vitamin A, but carotene can be converted into vitamin A in the liver.
